Sopa Poblano, a Creamy Soup from Puebla

My favourite dish of our ‘food of Puebla’ evening was the ‘sopa poblano‘, a creamy almost *vegetarian soup to die for.

*we used chicken broth in our class but vegetable broth would be an easy substitute…
  • lots of vegetables went into the ‘sopa poblano‘ including onion, garlic, tomatoes, poblano chiles, zucchini, corn niblets, mushrooms and zucchini blossoms.

  • The creaminess comes from crema fresca, tempered in at the end along with queso panela. This was my favourite dish of the Puebla evening. ¡Muy sabroso!
